House smoked "Label Rouge Salmon"
A high-quality salmon is a noble product and a delicacy for many - even if the availability is quite high in today's globalized world. But not all salmon is the same. For our salmon smokehouse, we exclusively use Scottish farmed salmon with the "Label Rouge" seal of quality. This ensures three main characteristics: perfect quality from a nutritional, taste and hygiene point of view, strict controls at the producers, thus maximum safety for the consumer and complete traceability.
As in any processing, the basic product is the most important ingredient. Nevertheless, the further processing of the salmon requires a great deal of sensitivity. Our chef Cyrill Pflugi was able to acquire the smoking craft in Scotland during his years of travel.
Before smoking, the salmon sides are marinated in a secret marinade consisting of 13 herbs. The most crucial part is the regular checks during the 12-hour smoking process over beechwood smoke. The smoke must not be too hot to prevent a cooking process and to avoid bitter substances in the smoked salmon. We process around two tons of salmon per year. The high demand speaks for itself.
Sundays again and again...
Every Sunday evening, chef Cyrill Pflugi serves the "Hof Maran" salmon plate, consisting of 5 different salmon components such as the smoked salmon rose, marinated salmon, smoked salmon mousse or salmon tartar.
Salmon "To Go"
For many years now, our Label Rouge salmon has also been available as "To Go" on pre-order at 081-378 51 51 or by email.
The "Label Rouge" salmon is available either sliced or in one piece. Together with the homemade mustard-dill sauce a truly delicious experience.
Since this winter the "Label Rouge Salmon" is also part of our MARAN "TO GO" at isblaatere.
